1) Can you replace the provided samples?
For example, I use EZ to create the track for ease but instead of using the samples provided by EZ Drummer I replace them with my own?
2) Are the EZ Drummer samples already eq'd/mixed?
Not sure if I should be creating a drum buss to edit/eq/mix them. In fear i would do more hard then good.

Here are the answers (If i understand you correctly)
1. Yes. There are a few ways to do it. You can break the midi out into individual tracks then just use whatever you want for the sample.

I do always split the drums into seperate tracks. So if I add a drum sampler to the fx and drop the samples in will this eliminate the existing sound from ez drummer or just add to it?
